Speaking to the Border Telegraph, Joe said: “The menu I’ll be using is the menu I use at my popular monthly London restaurant takeovers across the city. It is inspired by my time working at L'anima alongside top Italian chef Francesco Mazzei.

“ I have known Paolo for a few years now after meeting him at the PAPA (pizza and pasta association) awards last year where he was named the UK's best pizza maker.

“I’m looking forward to coming to Galashiels and cooking with Paolo this Friday and Saturday.  I love Scotland and I think Paolo is one of the most exciting, hard working, upcoming chefs in the UK.  I can't wait to get him down to London at some point.”
